Syndeo Gelling®, a substitute for gelatin
Alland & Robert has launched Syndeo® Gelling, a 100% natural and vegan gelling agent to substitute gelatin based on gum acacia and other non-vegan gelling agents. Syndeo® Gelling provides texturizing, thickening, stabilizing and binding qualities, offers an alternative for vegan health supplements such as gummies and sweet recipes such as candies, jellies, or mousses.
While gelatin provides high elasticity and reduced stickiness, pectin helps achieve firmer, stickier textures with little or even no elasticity. Syndeo® Gelling offers both low hardness and higher elasticity than pectin, without creating any stickiness. It does not alter the products’ sensory characteristics but preserves the tasting experience and feels pleasant in the mouth.
